Hot Tiger Prawns with Lime & Ginger Butter in Bread Croustades
Preheat oven to 200oC/400oF
6 slices sliced white bread 1 tsp root ginger, finely grated 2 x 4oz/125g tiger prawns 1 lime
Croustades - roll the bread flattish with your rolling pin. Cut into 4"/10cm circles and spread both sides lightly with softened butter.
Line a bun tin with the bread circles and cook for 8 - 10 minutes until golden.
Heat butter in a frying pan and add the finely grated ginger. Add the prawns and stir-fry for a few minutes until piping hot. Add the juice of half of the lime and freshly ground pepper. Spoon into the bread croustades garnish with lime wedges and some salad leaves.
Sit back and enjoy the praise.
