I'm sure this soup could be made with most cheeses (melting types). The quantities of cheese are personal tastes. I have liquidised the soup before adding the beer, but I prefer it with a bit of substance.
Broccoli and Cheese Soup
1 can chicken broth 1 soup can water 1/2 cup chopped onion 1 (10 oz.) pkg. frozen chopped broccoli 1 tsp. garlic salt 1/2 tsp. white pepper 8 ozs Scottish mature cheddar, grated 8 oz. whipping cream (don't whip) 1/3 cup flour mixed with 1/2 c. water 1/2 cup beer (alcohol cooks out of it) Parsley to serve
Bring broth and water to a boil. Add onion and broccoli; simmer for 8-10 minutes. Add seasonings. Add shredded cheese and stir until melted. Add the cream and heat slowly to a boil. Add flour-water mixture to soup, stirring constantly, until soup is the desired consistency. Add 1/2 cup beer. (Soup will bubble up, so be sure to use a large pot.) Heat to boiling. Boil and stir for several minutes. Sprinkle with parsley and serve with your favourite chunks of bread.
