Apple Fritters
Serves 4
4 oz/115g plain flour pinch of salt 2 egg yolks 1 egg white 1 Tbsp sunflower oil 5 fl.oz/150ml milk 1 lb/450g cooking apples juice of 1 lemon caster sugar, for sprinkling 4 oz/115g butter creme fraiche, to serve
Sift the flour and salt into a mixing bowl. Make a well in the centre and add the egg yolks, egg white and oil. Gradually incorporate the flour into the liquid with a wooden spoon. Gradually beat in the milk and continue beating to make a smooth batter. Cover with clingfilm and leave to stand for 30 minutes. Peel and core the apples, then cut them into rings about 1/4"/5mm thick. Spread them out on a plate and sprinkle with the lemon juice and caster sugar. Melt the butter in a large, heavy based frying pan over a medium heat. Dip the apple rings, into the batter, one at a time, then drop them into the frying pan. Cook for 2 - 3 minutes, on each side, or until golden. Transfer to a serving platter, sprinkle with more caster sugar and serve with creme fraiche or ice cream.

Hi Sue,
You know more about kids' tastes in food than I do, the strange thing is I couldn't keep the grandkids going either. Katy likes hers sprinkled with sesame seeds!? and sugar, as long as they eat something, I'm happy.
Hope you are all doing OK.
