Fruit Tea Loaf
Preheat oven to 180oC/350oF
1 tea bag 11 oz/300g soft dried fruit such as apricots, prunes, apples etc. 6 oz/175g soft brown sugar 2 medium eggs, beaten 8 oz/225g wholemeal flour 1 tsp baking powder 1 tsp mixed spice 2 ripe bananas, sliced
Grease and base line a 2 lb/1kg loaf tin.
Soak the tea bag in 10fl oz/300ml boiling water for 5 minutes. Roughly chop the soft dried fruit and add to the tea, discarding the tea bag and soak for 2-3 hours.
Mix in the sugar and eggs. Mix together the flour, baking powder and mixed spice and fold into the fruit mixture. Pour into the prepared tin and bake for 45 minutes or until firm to touch and a skewer comes out clean. Allow to cool slightly before slicing.
Serve with sliced bananas
