Apple Charlotte
Preheat oven to 180oC/350oF Serves 4 - 6
4 1/2 oz/120g Breadcrumbs 2 lb/900g Cooking Apples, peeled cored and sliced 2 1/2oz/60g Brown Sugar Butter Juice & Rind of 1 Lemon 2 Tablespoons Syrup 1 Tablespoon Water Slices of stale white bread Juice and rind of half 1 lemon 3 1/2 oz/85g Clarified Butter 1 1/4oz/30g Margarine (or Butter) 2 1/2 oz/60g Brown Sugar Stew the apples and in a little water with the sugar. Be careful not to let the apples completely dissolve into a purée you need some pieces for texture. Grease a casserole dish (1.75 litre) well and sprinkle some of the breadcrumbs over the bottom. Add alternate layers of apple and breadcrumbs finishing with a topping of breadcrumbs.
Heat the lemon juice, syrup, water and lemon rind and carefully pour over the top. Dot pieces of butter over the top and bake for 30 minutes.
Serve with creme fraiche or Vanilla Ice Cream or both
