I live right outside Lancaster Amish Country and this recipe was given to me by a very nice mennonite lady.
Shoo-Fly Cake
1 c. molasses 2 1/4 c. boiling water 1 Tbsp. baking soda 4 c. flour 3/4 c. shortening 1/2 tsp. salt 1 lb. brown sugar
Mix molasses, boiling water and baking soda together in a small bowl and set aside. Mix the flour, shortening, salt and brown sugar together with a fork or pastry blender until crumbs form. Remove and Reserve 1 cup of crumbs to be used as the cake topping. Mix the rest of the ingredients together (crumbs and liquid). Pour into a 13 x 9" ungreased baking pan. Bake at 350 degrees for 40-45 minutes. Remove from oven and top with the remaining reserved crumbs. Let cool and serve with Cool Whip if desired.
