I love this salad using cress on malted brown bread sandwiches.
Crab and Avocado Salad
Serves 3 - 4
7 oz/200g cooked crabmeat 1 Tbsp Dijon mustard 1 Tbsp mayonnaise 2 Tbsp garden cress or watercress, chopped 1 Tbsp basil, torn 1 ripe avocado, peeled, stoned and diced Salt and freshly ground pepper
Mix all the ingredients gently together and season. Place on a lettuce leaf on a plate to serve for a starter or, if eating as a light main course, enjoy with some green salad and some crusty bread.
