If you are shallow frying with butter, add a little oil to stop burning - butter browns easily and burns at a lower temperature than most vegetable oils.
The combination also gives the food a rich, golden colour.

Easy Garlic Butter
Take some chopped parsley and mix it with your butter. Then take your garlic, peel it and take out the green bit in the middle - it's bitter, not very nice. Slice your garlic really thinly, and take a little bit of salt and use the side of the knife to purée it. The salt helps break it down. Mix this into the butter and parsley mixture and your garlic butter is ready.
