Hi y'all: I made this on Tuesday night and thought maybe someone else would enjoy it as much as I do. We have dinner at church once a month on Wednesday night. I serve it in a glass pedestal bowl so that the presentation was nice. I came home with an empty bowl. Guess they liked it. Hope you ladies will too! 7 Layer Salad Head of Lettuce 1 medium onion 1 can green peas 1 medium green pepper 1 can Parmesan grated cheese (mine was 16 oz) 1/2 cup bacon - fried, drained and crumbled 1/2 cup mayo
(You can prepare the night before). Layer lettuce, layer of finely sliced onions, layer of chopped green peppers, layer of green peas (drain and reserved juice). Layer of Parmesan cheese and layer of bacon bits.
Mix mayo and pea juice together and pour over salad. Cover with plastic wrap and refrigerate until ready to serve. This is just delicious. You can use fat free mayo and I cannot tell any taste difference. I do have a girlfriend that likes to add a teaspoon of sugar to the pea juice....she like that flavor.
