These cookies are so easy to make and low in fat - only 4g fat, 146 calories per cookie. I'm going to try them with white chocolate next time.
Low-fat Chocolate Meringue Cookies
Makes 10 cookies
Preheat oven to 180oC/350oF
2 egg whites, 3 3/4 oz/110g icing sugar 3 3/4 oz/110g water biscuits, finely crushed 100g bar dark chocolate, melted few drops vanilla extract.
Line a baking sheet with greaseproof paper.
Whisk the egg whites until stiff. Continue whisking whilst adding the icing sugar.
With a metal spoon, fold the biscuit crumbs, melted chocolate and vanilla extract into the whisked egg whites.
Place 10 dessertspoonfuls of the mix on to the lined baking sheet, flattening them slightly. Bake in the centre of the oven for 12 - 15 minutes or until firm to touch.
Lift off the tray with a palette knife and place on a wire rack to cool completely.
