These fritters would be nice as starters for 4 people, or just a lunch snack for a family of 4.
Leek Fritters with Red Pepper & Tomato Sauce
Serves 4
10 1/2 oz/300g Leeks, cleaned and finely sliced (usually about 2 normal sized leeks) 4 tsp vegetable oil 1 red pepper, washed, deseeded and sliced 1 400g can of chopped tomatoes with herbs 4 1/2 oz/125g plain flour 1 medium sized egg 5 fl. oz/150ml milk 1 1/2 oz/40g mature cheddar cheese Seasoning to your taste, if using pepper, please use freshly ground
Saute the leeks for several minutes until softened. Place the pepper in a saucepan with the tomatoes. Cover, bring to a low simmer. Cook for about 20 minutes. Put the flour in a mixing bowl. Make a well in the centre and break the egg into this. Mix in with a whisk, gradually adding the milk until you have a smooth batter. Grate the cheese and add to the batter with the leeks. Heat the remaining oil in a frying pan. Place spoonfuls of the batter into the hot oil. Saute for several minutes until golden then turn and cook the other side. Serve with the red pepper and tomato sauce.
