Mozzarella, Tomato & Courgette Scone Pizza Preheat oven to 180oC/350oF
Serves 4
8 oz/225g self-raising flour 1 Tbsp baking powder 1 3/4 oz/50g margarine, plus extra for greasing 1 3/4 oz cheddar cheese, grated 1 medium egg 4 fl oz/125mls milk 3 medium sized tomatoes 1 x 125g pack of mozzarella, drained 1 courgette
Sieve flour and baking powder into a large bowl. Cube margarine and add. Rub in until mixture resembles breadcrumbs. Add the cheddar.
Break the egg into a measuring jug, add the milk to bring the measurement to 1/4 pt/150 mls and beat together. Add to the flour and mix to a smooth dough. Roll out on a floured work surface to about a 9"/23cm circle. Place on a lightly greased baking tray, or a pizza tray.
Slice tomatoes and mozzarella. Slice the courgette thinly with a peeler. Layer over pizza base. Cook for 20 - 25 minutes until golden and risen. Cut into slices and serve with salad.
