These make a pleasant change from eating sweet muffins. Katy, our grand-daughter, 13 today, a picky eater, loves them. She took 4 of them home with her last night + the recipe.
Savoury Welsh Rarebit Muffins
Heat oven to 200oC/400oF Makes 12
8 oz/225g self-raising flour 2 oz/50g plain flour 1 tsp baking powder ½ level tsp bicarbonate of soda ¼ tsp salt ½ level tsp mustard powder 4 oz/100g strong cheese , half grated, half cubed 6 Tbsp vegetable oil 5 oz/150g Greek yogurt 4 fl.oz/125ml milk 1 egg 1 Tbsp Worcestershire sauce
Prepare 12 paper muffin cases in muffin tin Mix together the self-raising and plain flour, baking powder, bicarbonate of soda, salt and mustard powder in a bowl. In a separate bowl, mix the cheese, oil, yogurt, milk, egg and Worcestershire sauce. Combine all the ingredients and divide between the muffin cases in the muffin tin. Place in the oven for 20-25 mins until golden. Remove and cool slightly on a rack.
