This dish is one of the best you can do in your crockpot. Remember that all slo-cookers differ; the newer models seem to cook quicker than the old versions.
Granma's Roast Beef and Gravy
1 Beef Roast (I use brisket, best for long slo-cooking) 8 ozs of mushrooms (roughly chopped) 2 potatoes (peeled and cut in half) 4 carrots " " " Parsley, a good handful roughly chopped 1 can of French Onion Soup
Gather all the ingredients, veggies on the bottom of the slo-cooker and the roast on top. (remember root vegetables take a long time, but they cook a bit quicker if you keep them to the bottom of the pot).
If you want, you could drain of the gravy, taste and season, then do your favourite thing, only you know your family's tastes. I personally use red wine, tsp of red jelly, tsp of dry mustard, then boil rapidly to reduce and thicken
