ONIONS FOR BREAKFAST ~ one onion per person...
excellent for lunch as well ~ serve with a side salad...
1 x large brown onion ~ with excellent skin ~ per person... 1 x kg. salt ~ slightly dampened... 1 x cup bechamel [white sauce] sauce ~ per onion.... 1 x egg yolk per onion... ½ x cup of 3 types grated cheese ~ your choice per onion...
heat oven to 150°c... make mounds of salt in a baking dish, a pile per onion... bed whole onion root side down~ one per pile and bake in the oven for one hour... remove from oven and cool the onions so that they can be handled.. cut the top off the onion neatly.... scoop out the layer of the onion until there is only about 3 layers left... chop the scooped out onion fine.. and add to the bechamel mixing well... half fill the onions with the bechamel mix... place a whole egg yolk on top of the bechamel.... fill the onions to the top with the rest of the bechamel... sprinkle the top of the bechamel stuffed onion generously with the grated cheese... pop back in the oven and leave to heat through and melt the cheese..
serve immediately... eat with a spoon..
