These can be served with a salad, dip etc., just experiment, they are very versatile.
Cheese and Mint Balls Serves 4
50g bread crumbs 150g crumbled feta cheese 3 Tbsp finely chopped mint Mix together.
Separately in a bowl, whisk 2 egg whites until stiff and fold into the feta mix and season. Divide the mixture into 12 and roll into balls, please don't roll so well as to have golf balls. Refrigerate the balls for 1 hour.
Pour enough sunflower oil/your choice of oil into a deep pan just enough to cover the balls. Fry the balls for 3 - 5 minutes until golden brown.
Drain on kitchen paper and sprinkle with a little fresh mint - serve.
