David and Harry's onion sweet pepper relish
6- cups diced,drained tomatoes
6-large red peppers,diced
8-cups sugar
2-small pkg.pectin
3-cups white vinegar
1-tsp.crushed red pepper flakes
4- jalapeno,seeded,diced
2-large diced onions
Mix all ingredients except pectin,boil 1-min.Bring to boil turn down and simmer 2-1/2.hours until thick.Whisk into 2 boxes of pectin boil 1 min.put in pint jars.
Water bath boil for 15 mins.
"FOR AN EASY DIP:
Mix 1 pint jars of relish with 8-ounce soft cream cheese mix well.
serve with corn chip scoopers"
