I made this last night and it is excellent...we will definitely have this again!! I am sure it would probably be good with any kind of fish. Enjoy...
Sweet Orange Salmon 2 TBSP brown sugar 1 tsp. chili powder 1/2 tsp. grated orange rind 1/2 tsp. ground cumin 1/2 tsp. paprika 1/4 tsp. salt 1/4 tsp. ground coriander 1/8 tsp. black pepper 4 salmon fillets (6-ounce) cooking spray Preheat broiler. Combine the first 8 ingredients in a small bowl. Rub spice mixture over both sides of the salmon fillets. Place salmon on a broiler pan coated with cooking spray. Broil for 8 minutes or until salmon flakes easily when tested with a fork. NOTE: This spice rub would also be good on pork tenderloin medallions. Per serving: 219 Calories; 6g Fat (25.8% calories from fat); 34g Protein; 5g Carbohydrate; trace Dietary Fiber; 88mg Cholesterol; 256mg Sodium; EXCHANGES: 0 Grain(Starch); 5 Lean Meat; 0 Fruit; 0 Fat; 1/2 Other Carbohydrates.
