CANDIED PECANS 1 cup pecan halves ½ cup brown sugar 2 Tbsp.dark rum 1 Tbsp. butter (melted) 1 tsp. ground cinnamon 1 tsp. ground allspice 1 tsp. ground ginger To prepare the candied pecans, preheat oven to 350°. Spread the pecans on a sheet pan and toast for 10 minutes. Meanwhile, in a large mixing bowl, mix together the brown sugar, rum, butter, and spices. Add the toasted pecans, and toss well. Spray the sheet pan you just used with cooking spray. Spread pecan mixture on sheet pan and bake 10 minutes longer, or until bubbly and caramelized. Let cool for 10 minutes, then remove them from the pan, separating any pecans that are stuck together, and let cool completely.
