My Mom used to make a peanut butter roll made with powdered sugar,margarine, vanilla and evaporated milk.Then you roll it out and cover it with peanut butter.Does anyone know how much of what to use. I've searched all over and haven't found a recipe just like this one. Thanks, lindab

PEANUT BUTTER ROLL CANDY
3 cans cake icing 2 lb. Domino powdered sugar
Make into a dough and roll out and spread with peanut butter and roll up and chill. Then slice and you have delicious peanut butter roll candy. This is much easier and tastier than boiling syrup.
PEANUT BUTTER ROLL
2 cups granulated sugar ½ cup white corn syrup ½ cup water 1/8 tsp salt 2 eggs whites 1 tsp vanilla ½ cups nuts, chopped (optional)
Mix sugar, water, syrup and salt. Cook over low heat, stirring constantly, until sugar is dissolved and mixture boils. Cook until hard ball stage (about 262 degrees). Remove from heat and pour over stiffly beaten eggs whites. Add vanilla and continue beating until mixture can be handled as dough. Divide into 3 balls and roll on greased board with greased rolling pin until about 1/4 inch thick. Roll with peanut butter which has been thinned to spreading consistency by adding melted butter. Blend in nuts, if desired. Roll as jelly roll and put on waxed paper. Let stand for short time..then slice to desired thickness.

4 c. white sugar 4 egg whites [beaten] 1 c. water 1 c. corn syrup[white] 1 t. vanilla Powdered sugar
Boil white sugar, water and water until it reaches hard ball stage or hard thread stage.. Beat egg whites while the sugar mixture is boiling. Pour hot mixture slowly over beaten egg whites and beat until fluffy. Sprinkle powdered sugar on waxed paper or board. Make 4 balls.Roll out one ball at a time . Spread with peanut butter and roll. Slice after chilling.

small amount goes long way. 1 cup confectonary sugar, 1 tsp. vanilla, add milk,teaspoon at tome until firm enough to roll out in more c. sugar. roll like pie crust, then spread with peanut butter, roll up and slice. have been making this since I was a child and it is awesome!
