Cajun Bean-N-Cheese Dip "Spicy dip for a tailgate party – or perfect for the big game on TV! This recipe is a slight adaptation of Ragin’ Cajun Bean-and-Cheese Dip by DMI. Makes enough dip to serve 12-16 people. "
Ingredients:
2 cans (16 oz) pinto beans or red kidney beans
1 can (14 oz) chili and tomatoes
1 cup chopped bell pepper
1/2 cup diced smoked sausage
* 2 teaspoons Cajun seasoning
1 teaspoon hot sauce
4 cup shredded sharp cheddar cheese
* tortilla chips*
Method: Pre-heat oven to 350 F. Spray a 2-quart casserole dish or 9x13 baking pan.
Drain and rinse beans; coarsely mash with a fork. Combine beans with tomatoes, bell pepper, sausage and 1/4 cup water. Add Cajun seasoning and hot sauce, more or less to taste.
Bake at 350 F for 30 minutes or until bubbly. Top with cheese and bake 5 minutes longer to melt cheese. Serve hot with tortilla chips.
* NOTE: When using reduced fat products - the fat grams per serving will only be 5 grams.
