Ham and Potatoes AuGratin
1/3 C. butter ¼ C. flour 2 ½ C. milk 2 C. shredded Cheddar cheese ½ t. salt ¼ t. white pepper 6 C. sliced potatoes, cooked 1 ½ C. cubed, cooked ham 1 ½ C. broccoli florets, cooked ¼ C. chopped onion
Topping:
3 T. butter, melted ½ C. cracker crumbs ½ C. shredded Cheddar cheese 1 T. parsley
In a saucepan, melt butter over medium heat. Whisk in flour until smooth. Cook for one minute. Gradually add milk; cook and stir until thickened and bubbly. Add cheese, salt and pepper; stir until cheese melts. Remove from heat. In a buttered 2 qt. casserole dish, layer potatoes, ham, broccoli and onion. Pour cheese over top. Repeat layers two more times, ending with cheese. Combine topping ingredients; sprinkle over casserole. Bake at 350 for 35-40 minutes.

Oh, yum! I made this tonight, and even my husband liked it. The only change I made was to saute the onions in butter beforehand.
