Cajun Grilled Ribs
4 pounds beef spare ribs 3 tablespoons chili powder 3 teaspoons black pepper 2 teaspoons salt 2 teaspoons onion powder 2 teaspoons garlic powder 1 teaspoon thyme 1 teaspoon oregano
Mix together the dry ingredients. Trim and clean ribs. Rub ribs with spices and let sit for 1 hour. Preheat grill. Cook over an indirect heat for about 45 minutes. Turn once. Watch carefully to avoid burning. The ribs are done when a knife passes easily into the meat between the ribs and you can see no, or very little pink.

Cajun Popcorn
1/2 cup butter, melted 2 teaspoons paprika 2 teaspoons lemon pepper seasoning 1 teaspoon salt 1 teaspoon garlic powder 1 teaspoon onion powder 1/4 teaspoon ground red pepper 20 cups popped popcorn
Preheat oven to 300 degrees F. In a small bowl, combine butter, paprika, lemon pepper, salt, garlic powder, onion powder and red pepper. Place popcorn in a large baking pan; pour butter mixture over popcorn and stir until well coated. Bake 15 minutes, stirring every 5 minutes. Remove from oven; cool completely. Store in airtight container.

Chicken Pot Pie
2 frozen pie crusts 3 tbs. margarine 1/4 cup pet milk 3 tbs. flour 2 cups cooked, diced chicken 1/4 tsp. black pepper 1 tsp. garlic powder 1/2 cup chicken broth 1 cup grated cheese 10 oz. pkg. frozen chopped broccoli, thawed & drained
Preheat oven to 425°. Place a cookie sheet in oven to preheat. In a saucepan, combine margarine, flour, pepper, & garlic powder. Cook over low heat until mixture is thick & bubbly.
Stir in broth & milk. Stir until mixture begins to thicken. Add cheese & cook until cheese is melted. Add chicken & broccoli. Pour mixture into pie shell.
Center 2nd pie crust (upright) on top of filled pie. Let thaw about 20 minutes. Crimp edges together & cut 3 slits in top crust.
Place pie on preheated cookie sheet. Bake until crust is browned. Makes 6-8 servings

Taco Pot Pie Makes 6 Servings
1 pound ground beef 1 medium onion, chopped (1/2 cup) 1 jar (16 ounces) taco sauce 1 cup shredded Cheddar cheese (4 ounces) 1 cup Original Bisquick(r) 1/2 cup milk 1 egg
Heat oven to 400°. Cook beef and onion in ovenproof 10-inch skillet over medium heat, stirring occasionally, until beef is brown; drain. Stir in taco sauce. Sprinkle with cheese. Stir remaining ingredients until blended. Pour over beef mixture. Bake about 30 minutes or until golden brown.

Pennsylvania Dutch Chicken Pot Pie
2 c. flour, unsifted 1 tsp. salt 1 egg 3 tbsp. shortening 1/2 tsp. baking powder 1/4 to 1/2 c. milk
Mix flour, salt, and baking soda; cut in shortening. Add egg and stir in enough milk to make soft dough. Roll out dough (using flour) until thin. Let sit 30 minutes.
Cut into 2 inch squares. Cook 1 whole chicken with pinch of saffron, 2 packs Herbox chicken broth, parsley, salt, and pepper until chicken falls off the bones. Remove chicken and put in quartered potatoes (you may have to add some water).
Bring to a boil. When mixture starts boiling, drop in one 2 inch square of dough at a time. Then put in shredded chicken and cook until potatoes and dough are done.
Add flour or cornstarch to thicken. I also like to add corn to the recipe for a nice chicken, corn, and noodle soup.

Red Velvet Cake
1/2 cup shortening 1-1/2 cups sugar 2 eggs 1 tsp vanilla 1 tsp butter flavoring 1-1/2 ounce red food coloring 3 level tablespoons cocoa 2-1/2 cups sifted, cake flour 1 cup buttermilk 1 tsp salt 1 tablespoon vinegar 1 tsp soda
Cream shortening, sugar, eggs, & flavoring. Make a paste of cocoa and food coloring, add to first mixture. Alternately add flour & buttermilk. Mix soda and vinegar in small bowl, add to batter. Blend .
Bake in (3) 9 x 10 inch ppans for 20 to 25 minutes in 350 degree oven. Let cool completely, then cover with frosting.
Frosting for Red Velvet Cake
3 tablespoons flour 1/2 teaspoon salt ( 1/2 to 1 teaspoon of Salt) 1 cup milk 1 cup shortening 1 cup sugar 2 teaspoons vanilla 1/4 teaspoon butter flavoring
Cook milk, flour and salt until thick, stirring constantly. Let cool. Cream shortening and sugar completely. Add flavors. Combine with first mixture. Spread over cooled cake.

Depression Cake
2 cups granulated sugar 2 cups strong coffee 2 cups raisins 1/2 cup shortening 1 apple, pared & grated 2 cups all purpose flour 1 tsp baking soda 1 tsp each: cinnamon, allspice, cloves, and nutmeg 1 cup chopped walnuts 2 tsp baking soda powdered sugar, for garnish
In large saucepan, combine granulated sugar, coffee, raisins, shortening and apple. Simmer 10 minutes over low heat, stirring occasionally. Cool 10 minutes. In large bowl, blend remaining ingredients, except powdered sugar. Stir raisin mixture into flour mixture. Pour batter into well greased & floured 13 x 9 inch pan. Bake in preheated 350 degree oven for 30 minutes or until pick inserted in center comes out clean.
Cool in pan & dust with powdered sugar, if desired. Ready to serve. (Variation: Bake in 2 layers in 9 inch pans & use frost with Caramel Icing, below.)
Caramel Icing Ingredients: 1 cup buttermilk 1-1/2 cups granulated sugar 1 cup brown sugar 1/2 cup butter 1/2 tsp soda 1 tsp vanilla
Mix sugars, soda, milk, & butter in saucepan. Cook until mixture will form soft ball when dropped in cold water. Add vanilla and beat until creamy. Add nuts if desired.

Cocoa Cola Cake
Cake 2 cup flour 1-1/2 cup minature marshmallows 2 cup sugar 1 cup butter or margarine 2 tsp cocoa, unsweetened 1 cup Cola 1/2 cup buttermilk 2 eggs, beaten 1 tsp Baking Soda
Icing 2 tablespoon butter or margarine 2 tablespoon Cocoa, unsweetened 8 tablespoon cola 2 cup Sugar - Powdered 1 cup Nuts - Chopped
Combine flour and sugar in a large mixing bowl. Melt butter, add cocoa and cola (not diet), heat to boiling. Cool slightly. Pour over flour and sugar mixture, stir till well blended. Add buttermilk, beaten eggs, soda & vanilla. Mix well, stir in marshmallows. Pour into greased & floured 13x9 pan and bake at 350 degrees F for 40 min., or till tests done. Frost while hot.
FROSTING: Combine first 3 ingredients in saucepan and heat to boiling. Add powdered sugar and mix well. Stir in chopped nuts.

Blackberry Cake
2 cups sugar 1 cup butter 4 eggs 4 3/4 cups flour 1 teaspoon soda 1 teaspoon. baking powder 1/2 salt 1 cup buttermilk 1 teaspoon vanilla 2 cups fresh or frozen blackberries
Cream together sugar and butter. Add eggs one at a time. Beat well. Stir together flour, soda, baking powder,and salt.Combine vanilla and buttermilk with cream mixture. Beat well. Fold in blackberries. Bake in 10" tube pan at 350 for 1 hour and 15 minutes. Combine 1 1/2 cup powdered sugar with 1 t. milk and drizzle over cake when cool.

Applesauce Cake
2-1/2 cups flour 2 cups sugar 1-1/2 tsp. baking soda 1 can (16 oz.) applesauce 1 tsp. cinnamon 1 tsp. baking powder 1/2 cup water 2/3 cup vegetable oil 2 beaten eggs 1 cup nuts 1 cup raisins
Put all ingredients into a bowl; just mix with a spoon. Bake at 350 degrees for one hour and 15 minutes. A very delicious cake; real moist.

Old Fashioned Pumpkin Pie
9 inch Pie crust, unbaked 2 eggs 1 can of pumpkin 3/4 cup sugar 1/2 teaspoon salt 1 teaspoon cinnamon 1/2 teaspoon ground ginger 1/4 teaspon ground cloves 1 2/3 cup of evaporated milk or light cream
Heat oven to 425F. Beat eggs slightly, beat in remaining ingredients. Pour into pie crust. Bake 15 minutes. Reduce oven to 350F. Bake 45 minutes longer. Knife inserted in center comes out clean. Cool and serve with whipped cream.

Old Fashioned Homemade Noodles
2 c. flour 2 eggs 1/2 tsp. salt Add water to mixture until it sticks together and is stiff. Roll out thin. Flour both sides and roll up like jelly roll. Cut off thin pieces and unroll and let dry a little. Cook in boiling water a minute or two until done. Drain and add to soup.

Old Fashioned Pickled Beets
7 pounds of beets, about 2 or 2-1/2 inch diameter beet 4 cups apple cider vinegar 1 1/2 teaspoon canning or pickling salt 2 cups granulated sugar 2 cups water 2 cinnamon sticks 12 whole cloves 5 Vidalia or sweet type onions, if desired Trim off beet tops, leaving 1 inch of stem and roots to prevent bleeding color. Wash trimmed beets thoroughly. Cover with boiling water and cook until tender -- about 25 to 30 minutes. Drain and discard liquid. Cool beets. Trim off roots and stems. Skins will slide off easily. Slice into slices about 1/4 inch thick. Peel and thinly slice onions. Combine vinegar, salt, sugar, and water. Bring to a boil.
Tie spices in a bundle in a small piece of cheesecloth and add to vinegar mixture. Add beets and onions. Simmer 5 minutes. Remove spice bag. Using a funnel, fill sterilized jars with beets and onions. Leaving 1/2 inch headspace. Add hot vinegar solution, allowing 1/2 inch headspace. Adjust lids and process. Makes 8 pints.

Lemon Pudding Put in double boiler 2 cups boiling water and juice and rind of 1 lemon. Beat 1 egg yolk until light and fluffy.
Add 3/4 cup white sugar, 1/2 teaspoon salt. Mix 2 tablespoons cornstarch or 1 tablespoon flour and 1 tablespoon cornstarch with cold water until smooth.
Add to boiling water. Cook until thick. Stir constantly.
Add small piece butter when cool. Beat white of egg until stiff. Add 2 teaspoons sugar, 1/8 teaspoon salt, vanilla or serve with whipped cream.

Corn Pudding
2 cans creamed corn 4 tbsp. sugar 4 tbsp. flour 4 eggs 1/2 tsp. salt 1/2 lb. grated American cheese 1 sm. can pimientos
Mix all together. Top with grated cheese and paprika. Bake 45 minutes at 350 degrees or until cooked through.

Cherry Pudding
1/2 c. sugar 1 tbsp. margarine 1/2 c. milk 1 tsp. baking powder 1 1/4 c. flour
Sift together sugar, baking powder and flour. Cut in margarine until crumbly. Add milk and stir until flour is taken up. Grease a 9 inch pan or 1 1/2 quart dish. Spread cake mixture in bottom of pan.2 c. canned sour pitted cherries, 1 1/2 c. sugar, 2 c. cherry juice (add water to make 2 c.), 2 tbsp. melted margarine Mix above ingredients and pour over batter in pan. Bake at 425 degrees until the batter is lightly brown.

Cranberry Nut Bread
3/4 cup orange juice 1 egg 2 tablespoons oil 2 cups flour 3/4 cup sugar 1-1/2 teaspoons baking powder 1 teaspoon salt 1/2 teaspoon baking soda 1 cup chopped cranberries 1/2 cup chopped walnuts
Preheat oven to 350 degrees. Combine juice, beaten egg and oil. Stir together flour, sugar, baking powder, salt and baking soda. Stir in juice mixture. Fold in cranberries and nuts. Pour into lightly greased and floured pan. Bake 350 degrees for 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool ten minutes and remove from pan to cool on wire rack.

Cold Spaghetti Salad
Cherry tomatoes, cut up 1 cucumber, sliced 1 green pepper, sliced 1/2 bottle Schilling Salad Supreme Seasoning 1 lb. vermicelli spaghetti, cooked (rinse, drain in cold water) 1 (8 oz.) bottle Italian dressing 1 pkg. sliced pepperoni
Chill and serve. 4 servings.

Baked Spaghetti Recipe
3/4 of a one pound box of spaghetti 1 jar (approx. 32 oz. of any spaghetti sauce 1 lb. ground beef small onion 1 small jar or can of drained mushrooms 1/2 small green pepper 1 package (1 cup) shredded mild cheddar cheese 1 package (2 cups) mozzarella cheese
Brown ground beef with onion and green pepper. Drain well and set aside. Cook spaghetti as directed, drain and set aside. Add ground beef and mushrooms to spaghetti sauce and simmer 20 minutes.Spray an oblong casserole dish ( I think mine is 8 1/2" x 11")
Layer half of the spaghetti and half of the spaghetti sauce. Sprinkle cheddar cheese over it. Add the other half of the spaghetti and spaghetti sauce. Sprinkle the mozzarella cheese over all. Bake covered at 350 for 40 minutes. Uncover and bake until the cheese is a light golden brown, usually 5-15 minutes.
Makes 4 servings

Italian Spaghetti Sauce
2 lbs. ground beef 1 med. onion, finely chopped (about 1/2 c.) 1 green pepper, finely chopped 2 (15 oz.) cans tomato sauce 2 (12 oz.) cans tomato paste 1 (7-1/2 oz.) can pitted ripe olives, drained & sliced 2 (1-1/2 oz.) envelope Italian style spaghetti sauce mix* 3 c. water 1 tbsp. sugar 2 cloves garlic, crushed 1 bay leaf, crumbled
Use mix with mushrooms Cook and stir ground beef, onion and green pepper until meat is brown and onion is tender. Stir in remaining ingredients. Cover, simmer 1-1/2 hours, stirring sauce occasionally.
Makes 6 servings

Citrus Marinade for Fish
1/2 cup fresh Lime juice 1/4 cup vegetable Oil 2 green Onions, chopped 1 tsp dried Tarragon leaves 1/4 tsp Garlic powder 1/4 tsp black Pepper
Blend all ingredients in a small bowl. *Great marinade for fish fillets. Makes 1 cup

Lemon Pepper Marinade for Chicken
2/3 cup lemon juice 6 tablespoons water 2 teaspoons chicken bouillon granules 2 cloves garlic, minced 1 teaspoon pepper Combine all ingredients. Mix well. Makes about 2/3 cup.

Grilled Steak/Mustard Marinade
1/3 cup olive oil 1/4 cup red wine vinegar 1/4 cup dry red wine 2 cloves garlic, minced 1 teaspoon dried basil 2 tablespoons hot and sweet mustard 1 tablespoon ketchup 2 pounds boneless sirloin steaks, 1 inch thick
Combine oil, vinegar, wine, garlic, basil, mustard, ketchup in shallow bowl. Add steak. Marinate 1 hour, or refrigerate overnight. Grill steak on oiled grill rack, or broil on oiled broiler pan rack; 5 minutes per side for medium rare.

All Purpose Marinade
3 c Dry white wine 1/2 c Soy sauce 1/2 ts Cayenne pepper 1/2 ts Garlic powder 1 ts Onion powder Mix all ingredients together. Grilled Portobello Mushrooms
6 large portobello mushrooms 6 tbsp. balsamic vinaigrette 2 tbsp. Worchestersire sauce 3 tbsp. olive oil 2 chopped scallions 1 tsp. garlic powder 1 tsp. lemon juice pinch of basil salt and pepper to taste
Preheat the broiler. Trim the mushroom steps at the cap and wipe the portobello mushrooms clean with a damp towel. Combine the marinade and brush the mixture on the mushroom caps. Marinade for 1 hour. Arrange the mushrooms on a broiler rack round side up and broil for 3 minutes. Flip the mushrooms using tongs and cook for an additional 5 minutes, grill side up. Drizzle the remaining marinade on top. For best results, serve on focaccia bread with tomatoes and feta cheese or with a side of polenta.

Baked Apples
8 to 10 apples, cored, peeled & halved 3/4 c. white sugar 3/4 c. brown sugar 1/2 c. flour 1 tsp. cinnamon 2 tsp. butter, melted 1 c. water
Place apples in greased 9 x 13 inch dish. Mix remaining ingredients together in ORDER given, in pan and bring to a boil. Simmer, stirring until thick. Pour syrup over apples and bake at 350 degrees for 35 to 40 minutes or until tender.

Apple Rice Pudding
1/3 c. maple syrup 2 tbsp. butter 1/4 tsp. cinnamon 1/4 tsp. nutmeg 2 chopped apples 2 c. cooked rice 2 c. milk 2/3 c. raisins
Heat first 5 ingredients in a medium-sized pan until bubbly. Add cooked rice, milk and raisins. Simmer for about 15 minutes, stirring occasionally, until mixture thickens. Serve in heated bowls. If desired, each serving may be sprinkled with a crunchy topping such as toasted coconut, wheat germ, Grape Nuts or sunflower seeds.

Apple Smothered Pork Chops
6 pork chops 3 tablespoons molasses 2 teaspoons salt 3 tablespoons flour 1-1/2 teaspoons sage 2 cups hot water vegetable oil 1 tablespoon cider vinegar 3 tart apples 1/3 cup raisins
Season each chop with 1/4 teaspoon salt and 1/4 teaspoon sage. In skillet, slowly brown chops on both sides in a small amount of vegetable oil. Place chops in a shallow baking dish; reserve drippings. Peel, core and slice apples 1/4 inch thick; arrange on chops. Pour molasses over apples and chops. Sprinkle flour over drippings in skillet; cook until brown, stirring occasionally. Slowly add water, stirring constantly to keep smooth; bring to boil. Stir in cider vinegar, 1/2 teaspoon salt and raisins. Pour over apples and chops. Cover and bake at 350 degrees F for 1 hour.
