On a cookie sheet, place tortilla chips one at a time, that have been coated with: Layer one--a teaspoon of refried beans, layer two--a teaspoon salsa, and black olives layer three--sprinkle of cheese Bake at about 375-400 until cheese has melted. Serve warm.

1 container chicken livers 1 pound sliced bacon 1 box round toothpicks salt and pepper flour for coating
Cut the pound of bacon in half. Roll one half liver with one half slice of bacon, and secure it with a toothpick or two. Season with salt and pepper, and roll lightly in flour. Fry, until thoroughly cooked, but not crusty. NOTES# Its best to not let livers completely thaw, or they will be hard to work with. When all are wrapped keep chilled in fridge till cooking time. Its best to get a bacon that is not very thin--more like platter bacon. It's great to make brown gravy from the drippings!

1 package sausage links 1 package refrigerator biscuits 1/2 cup tomato paste Oregano 1 cup shredded Cheddar cheese
Flatten each biscuits out to a 4 inch diameter, and place on a cookie sheet. Spread some tomato paste on each round. Sprinkle with oregano. Slice the sausage links into small rounds and decorate each biscuit with them. Sprinkle with cheese. Bake in a 450 degree oven for 5 minutes. Serve hot---serves 10.

5 ounce jar cheese spread 1/4 cup chopped up pimento-stuffed green olives 3-4 slices crisp cooked and crumbled bacon slices dash of cayenne pepper 24 your choice crackers, or melba toast
1. place the cheese spread in a one quart bowl. Microwave on low one minute or until spreadable. Stir in the chopped up olives, crumbled bacon, and dash of cayenne. 2. Place the toast or crackers in a circle, on a round microwave safe plate. 3. Spread about 1 teaspoon cheese mixture on each cracker. Then you can also garnish each cracker with an olive slice. 4. Microwave on high 45 to 60 seconds, or till the cheese melts. (Give the plate a half turn after 30 seconds if no turntable inside.) Makes 24.

8 slices Bacon fried crisp and crumbled 2 cans deboned chicken(about 5 oz sizes)with broth 1 can (8 1/2 oz.)water chestnuts drained and fine chopped 3/4 cup salted cashew nuts, chopped 80 of your choice crackers, or trimmed and toasted bread squares juliened pieces of ripe olives
Mix bacon, chicken, water chestnuts, and cashew nuts. Arrange crackers or toasted squares on a platter of paper towels. Spread one rounded teaspoon of the mix on each cracker, garnish with the olive pieces. Heat in microwave for about 45 seconds.

With a cookie cutter, cut slices of whole wheat and white bread into circles, about 2 12/ inches in diameter. Butter the bread circles, and spread a filling between each of the two. To make the face, pipe cream cheese around the top of the circle, and sprinkle small grated carrot over the cream cheese to simulate hair. Use strips of raisins for eyebrows and nose, diamond shaped green pepper for eyes, and pimento cut in half-moon shape for the mouth.

Cut round eyes from black olives, a half-moon shaped mouth with a pimento, and tiny triangles of pimento for cheeks.

4 medium sweet potatoes(1 1/2 pounds) 2 tablespoons salad oil or shortening 1/2 cup brown sugar 1/4 cup orange juice 1/4 teaspoon grated orange rind
Wash sweet potatoes, cover with water, and partially cook, until just tender enough to be pierced with a fork. Do not overcook. Then drain and set aside. Combine rest of ingredients in a saucepan; heat to boiling, and cook 2 minutes. Peel sweet potatoes, and cut in half lengthwise. Place in shallow 8 inch square baking pan. Pour the syrupover them. Bake in slow oven (300) for 55 minutes, or until well glazed. After the first 15 minutes, turn potatoes and baste with the syrup, every 10 minutes. 8 servings.

3 cups hot mashed potatoes 1/2 cup heavy cream 1/3 cup grated American cheese
Mash potatoes with salt and butter. or margarine to taste, and enough milk to give a light fluffy consistency. Place in custard cups. Whip the cream, add cheese, and mix well.---Spread over the potatoes. Bake in a moderate oven(350) for 15 minutes, or until browned. Serves 6.

Measure 4 cups thinly sliced, pared, raw potatoes into a 0ne quart casserole. Blend 2 cups of tomato sauce, one medium chopped onion, one finely chopped garli clove,1 1/2 teaspoons salt,one dash pepper, and one teaspoon of paprika. Pour the sauce over the potatoes, stirring lightly. Cover with good fitting lid. Bake in a moderate oven(375) until potatoes are tender, one hour---serves 6.

2 cans navy size Pork and Beans 2 tablespoons finely chopped onion 1/3 cup ketsup 3/4 cup regular white sugar 4-5 weiners cut up in slices 4 or 5 slices bacon, cut in 1 inch pieces-raw
Mix all except bacon, and pour into 9in square baking dish. Arrange bacon to cover the top. Bake at 375 till bubbly, and slightly brown appearing. Guess I have never timed it exactly--but you don't want them dried out.

large package semi sweet chocolate chips 2-4 tablespoons grated parafine at least a 2 pound bag of powdered sugar 2 sticks(1/2 pound)margarine or butter softened at room temperature--(NOT MELTED) 2 teaspoons vanilla, or orange, or lemon, or mint flavoring 2-3 tablespoons sweetened condensed milk
This is a make up your own candy. Some adjustments in the ingredient amounts may be neccessary. This is a recipe my Mother taught me that she made for the family since I was a small child. Using the 2 sticks of soft margarine/butter, add the 2 teaspoons of your choice of flavoring. Work in, with your hands, an amount of powdered sugar, one cup at a time, until you can no longer work anymore in. Add a couple of tablespoons of sweetened condensed milk, and work in well. If the candy dough is not quite thick enough to roll into balls, add a little more powdered sugar, until it is. Then roll into balls about the 1-1 1/2 inch size. Cover and set aside.(make them small because they are so rich) Up to this point this is a great recipe for very young cooks! Adults--- Melt chocolate chips in a metal bowl sitting in a pan of water on the stove(make-shift double boiler), and shave up the parafine into the melting chocolate chips. Stir the chocolate well to blend. When the chocolate is melted and smoothe, dip the balls into the chocolate, with a fork, and roll to completely cover, then place ball on buttered wax paper, until all used up.

1 cup sifted All purpose flour 1/4 teaspoon salt 1/2 cup brown sugar, packed 1 egg 1 Tablespoon water 1/2 teaspoon soda 1/2 cup shortening 1/2 cup sugar 1/2 cup peanut butter 1/2 teaspoon vanilla
Mix all ingredients together with hands, blending well. Drop by spoons full, and press each one to flatten just a little, with a fork dipped in sugar. Bake at 325, 15-20 minutes. 3 1/2 dozen. Note# 1. I usually have to triple this recipe because they taste so good! 2. You can also make a thumbprint in the dough, and place some jelly or jam in the print.

1 1/2 cups crisp rice cereal 1/2 cup brown sugar 1/4 cup butter 1 cup flaked coconut 1 1/2 to 2 quarts of your favorite ice cream, softened
1. Lightly mix together, the cereal, sugar, butter, coconut, (and ground or grated nuts if desired). 2. Place 1/2 of this mixture into a buttered 8 inch pan, or baking dish. 3. Spread the softened ice cream over that mix. 4. Place the remaining cereal mix on top, and pack as firmly as possible. 5. Cover well and refreeze.

2 cups milk, scalded 2 squares unsweetened chocolate 4 tablespoons corn syrup 1 teaspoon vanilla flavoring 1 teaspoon orange flavoring 1/4 teaspoon salt 3/4 cup sugar 1 cup whipping cream 2 egg whites, stiffly beaten 3 tablespoons quick cooking tapioca
Melt chocolate over hot water. Add milk, tapioca, and salt. Cook until tapioca is clear. Add sugar and syrup. Stir until sugar is dissolved. Rub the mix through a coarse seive. Chill thoroughly. Fold in egg whites. Add flavorings. Carefully fold in stiffly whipped cream. Pour into freezer tray, or electric ice cream machine. Freeze---8 servings

Combine yolks, sugar, and syrup. Beat till thick and creamy. Add milk, cream, and vanilla--mix till blended. Freeze until firm about 1.4 inch from edges, then add egg whites, and beat 3 minutes. Freeze--6-8 servings.

3/4 cup boiling water 1 envelope low calorie lime flavored gelatin 1/2 cup sugar 1 1/2 cups buttermilk 1 1/2 teaspoons grated lemon peel 3 tablespoons lemon juice
Pour boiling water over gelatin and sugar in a heat-proof bowl, stirring until both are completely dissolved. Mix in the remaining ingredients. Chill in the freezer until thickened. Beat mixture until foamy. Pour into freezing tray, and freeze until firm. Makes 8, one half cup servings, at 70 calories each.

2 cups bottled Concord grape juice 3 1/2 cups sugar 1/2 bottle liquid fruit pectin
1. Place juice and sugar in saucepan. Bring to a boil over high heat, stirring constantly. 2. Stir in fruit pectin at once, bring to a full rolling boil. 3. Boil hard for 1 minute, stirring constantly. 4. Remove from heat, skim, and pour into hot sterilized jelly glasses/jars. 5. Seal with parafin. Makes 5, 6 ounce glasses.

Serves 20-25! 2 pounds pork shank 2 pounds veal shank 2 pounds beef shank 2 pounds breast of lamb 1 4#pound hen 8 quarts water 1 1/2 pounds Irish potatoes, peeled and diced 1 1/2 pounds onions, peeled and diced 3 large carrots, scraped and diced 2 green peppers, seeds removed and diced 2 cups chopped cabbage 1 quart cooked tomatoes 2 cups fresh or canned corn kernels 2 pods red pepper 1 cup diced celery 2 cups diced okra 2 cups fresh or canned lima beans 1 bunch chopped parsley salt and cayenne to taste about 4 teaspoons Worcestershire sauce
Cover the meat with cold water; bring slowly to a boil. Simmer until meat is tender enough to fall off the bones.
Remove meat from the stock, cool and dice the meat, removing all the bones.
Return meat to the stock; add all the prepared vegetables, except the parsley. Let simmer till thick. Burgoo should be thick, but still soupy.
Season Burgoo gradually while cooking, but not too much until stew is almost done. As the stew simmers, the seasoning becomes more pronounced.
Stir frequently with a long handled wooden spoon, during the first part of cooking, and almost constantly after it thickens. Add the chopped parsley near the end of the cooking time.
Hint# The total cooking time is about 8 to 10 hours; however, the time may be cut in half, by cooking the meats one day, and completing the cooking the following day.
Quite often, in Kentucky at fair time, you will find large tubs or vats of burgoo cooking, and being stirred with boat oars. Large bowls of the stew are for sell, and the people go back for seconds!

chili sauce flour celery cut in 3 inch lengths carrots scraped and quartered small onions peeled baking potatoes, pared and quartered 1 inch cubes of beef sirloin tip Ac cent, salt , and pepper
Use heavy duty foil. For each serving combine 2 tablespoons of chili sauce, and 2 teaspoons of flour; spread in center of large square of foil. On the sauce arrange several pieces of celery, one scraped and quartered carrot, 3 peeled small onions, and 2 pieces pared and quartered potatoes. Top with about 1/3 pound beef sirloin cubes;sprinkle about 1/3 teaspoon salt, dash of pepper, and 1/2 teaspoon AcCent. Fold the foil into a secure package, and fasten ends underneath securely. Cook over glowing coals until all is tender, about one hour.
