Lima Bean and Kielbasa Soup
This hearty soup is really a one-dish meal, so serve it with a salad and some crusty bread for an easy crowd pleaser.
1 lb (450 g) dried lima beans, picked over and rinsed 1 lb (450 g) kielbasa or other smoked sausage, cut into 1/4-inch (5 mm) slices 2 carrots, cut into 1/4-inch (5 mm) slices 2 ribs celery, cut into 1/4-inch (5 mm) slices 1 large onion, chopped 2-4 cloves garlic, finely chopped 6 cups (1.5 L) water Salt and freshly ground pepper to taste 1 15-ounce (425 g) can diced tomatoes with their liquid
Combine all ingredients except the tomatoes in a slow cooker and cook covered on high for 10 to 12 hours, or until the beans are tender. Alternately, cook in a tightly covered baking dish in a 300F (150C) oven. Stir in the tomatoes and cook covered for 15 minutes. Serves 8 to 12.
