Ingredients for 6 Servings
2 cups Sirloin or leg of American lamb, cut in 1/2-inch cubes 6 oz Sour cream 2 oz Mayonnaise 1/2 tsp Salt 1/4 tsp Black pepper 1/2 tsp Leaf oregano 3 tbsp Lemon juice 1 tbsp Honey 12 oz Spinach noodles 2 med Bell peppers, chopped 5 1/2 oz Black olives, drained and sliced 6 oz Swiss cheese, grated 2 med Tomatoes, chopped 1 cup Walnuts
Procedure:
1. Braise lamb in stock until tender, about 40 minutes. 2. Combine sour cream, mayonnaise, salt, pepper, oregano, lemon juice and honey. 3. Chill. 4. Cook noodles as directed; rinse and drain. Refrigerate until chilled. 5. Combine remaining ingredients with chilled noodles. 6. Toss with chilled dressing. 7. Chill thoroughly before serving. 8.
