This unbelievably delicious and moist.
breadmachine - Cantaloupe Bread 2 1/4 c. peeled, seeded, cubed cantaloupe 1 .25oz. package instant yeast 3 1/4 c. bread flour 2 tbsp. vital wheat gluten 1/3 c. dry milk powder 3 tbsp. white sugar 1 tsp. salt 1/2 tsp. paprika 1 egg 3 tbsp. softened butter 1 tbsp. grated orange zest
Place 1 1/2 cups of the cantaloupe cubes in a blender or food processor and puree. Reserve remaining 3/4 cup cantaloupe cubes. Place yeast, flour, gluten, milk powder, sugar, salt, paprika, egg, butter, orange zest, the remainder of the cantaloupe cubes and the cantaloupe puree in the pan of the bread machine according to manufacturer's directions. Use the White Bread cycle. This is a soft, sticky dough. If any of it clings to the sides of the pan at the end of the first kneading, you can push it down with a rubber spatula. Let cool, cut into thin slices and serve toasted with cream cheese. Makes a 1 - 2 pound loaf.
