The cocoa, molasses and coffee give the bread it's dark color. breadmachine - Russian Black Bread
1 1/2 c. water 2 tbsp. cider vinegar 2 1/2 c. bread flour 1 c. rye flour 1 tsp. salt 2 tbsp. butter 2 tbsp. molasses or dark corn syrup 1 tbsp. brown sugar 3 tbsp. unsweetened cocoa powder 1 tsp. instant coffee granules 1 tbsp. caraway seed 1/4 tsp. fennel seed (optional) 2 tsp. active dry yeast
Place ingredients into the bread machine in order suggested by the manufacturer. Use the whole wheat, regular crust setting. After the baking cycle ends, remove from pan and place on a cooling rack. Allow to cool for 1 hour before slicing. Makes a 1 - 1 1/2 pound loaf.
Or do it the old fashioned way. Use warm water, dissolve the yeast and brown sugar, let set for 10 - 15 minutes. Then add the rest of the ingredients, adding the bread flour last. Let your stand mixer do the kneading. Then let rise, punch down, shape and bake at 350 for 40 - 45 minutes. Or make 2 smaller round loaves.
