Have made this many times - can also be made in bread machine on cake setting. 1 cup sugar8 tbs (1 stick) unsalted butter room tempature2 large eggs3 ripe bananas mashed1 tbs milk1 tsp cinnamon2 cups all purpose flour1 tsp baking powder1 tsp baking soda1 tsp salt Cream sugar and butter in large mixing bowl until light and fluffy. Add eggs one at a time beating after each addition. In small bowl mash bananas with fork. Mix in milk and cinnamon. In another bowl mix flour, baking powder, baking soda and salt. Add banana to creamed mixture stir until combined. Add dry ingredients, mixing until flour disappears. Pour batter into prepared pan (loaf) bake approximately 1 hour until toothpick comes out clean. Cool for 15 minutes before removing from pan. I have also added 1 cup chopped nuts or chocolate chips ( you can even combine the two) It is even better with the additions.
