Dawn's Vanilla Raisin Bread
2/3 cup Raisins -- soaked in vanilla (I soak them overnight) 1 1/8 cup Buttermilk 1 lg egg 2 tb sugar 1 tsp. salt 3 tb butter 3 1/2 cup Bread flour 2 tsp. yeast ***2 tsp. Cinnamon (optional)
Combine raisins and vanilla for at least 1 hour then drain well. If you want to make on the spur of the moment, combine the raisins and vanilla then microwave for one minute on HIGH. For a stronger vanilla flavor, reserve vanilla and use as part of your liquid. Add ingredients to ABM according to manufacturer directions..Basic setting-light crust. Check at 5 mins. and adjust flour as needed. Raisins added at the beep.
My notes: I reserve the vanilla, then add enough buttermilk to come to the 1 1/8 cups liquid.
The cinnamon I put directly on the raisins...as they sit waiting for the "beep" they absorb the flavor.
This is a big, sometimes lid thumper loaf. Not a problem....I reserve the "mushroom" top for myself (awesome with coffee in the morning) And this bread makes the BEST French toast. I save the ends and make FT and then freeze it...great for a quick breakfast for the kiddos. Enjoy! Hera
MY NOTES: I added my vanilla/raisins and cinnamon together – heated them in the microwave and added at the beep.
