Potato Bread From the Bread Machine Cookbook V By Donna Rathmell German Recipe Originator: Pat Hall [Note at top of recipe] Pat says this is one of their standby breads and she makes it all the time. Cook the new or small potato in the microwave until soft and cut into quarters or eighths (the machine will mash it during the kneading). Place the cut potato, peel and all, into the liquid measuring cup and add water up to the level given. She sometimes adds 1-2 Tablespoons buttermilk dressing mix (dry) for extra flavor. Potato Bread 1 pound loaf 4 ounce potato, cooked water, as needed Wet ingredients should equal 1 cup 1 Tablespoon butter 1 1/2 Tablespoons sugar 3/4 teaspoon salt 2 cups bread flour 1 teaspoon yeast Potato Bread 1 1/2 pound loaf 6 ounce potato, cooked water, as needed Wet ingredients should equal 1 1/2 cups 1 1/2 Tablespoons butter 2 Tablespoons sugar 1 teaspoon salt 3 cups bread flour 1 1/2 teaspoons yeast Potato Bread 2 pound loaf only 7 ounce potato, cooked water, as needed Wet ingredients should equal 1 3/4 cups 2 Tablespoons butter 2 1/2 Tablespoons sugar 1 teaspoon salt 3 1/2 cups bread flour 2 teaspoons yeast Cycle - wheat, sweet, white; no timer Setting - medium Per 1 ounce: 68 calories, 12.8 carbohydrate, 1g fat, 0mg cholesterol, 110mg sodium Enjoy! -Shortcake
