Hi zafire906!
If you could tell me which city/town in TN and which restaurant maybe I can help you there a little, too. 2 very close friends just moved back from White City, TN about 9 months ago. They lived there about 5 years. It is close to Knoxville. Peggy got lots of recipes from TN and shared lots with me!

Hi! This is what I found at The Elegant Chef web site:
Salsa Recipes Shrimp Salsa his salsa's principal ingredients are baby shrimp, red tomatoes and green cucumbers. The shrimp salsa is an attractive accent atop a green salad. It is a perfect first course luncheon plate.
Ingredients 1 Tablespoons olive oil 8 Ounces fresh baby shrimp 3 Chipotle chiles en adobo 3 Ripe tomatoes, seeded and diced 1 Avocado, pitted and diced ¼ Diced cucumber 1 Tablespoon fresh lime juice
Process Heat the olive oil in a sauté pan and cook the shrimp over high heat for 2 minutes until they turn pink. Transfer into a mixing bowl. Rinse the chipotles with water and julienne them into thin strips. Add to the mixing bowl with the tomatoes, avocado, cucumber and lime juice and combine. Chris
