Turkey Enchiladas 1 package Knorr® Classic Sauces White Cream Sauce Mix 1 1/2 cups shredded cheddar cheese (6 oz) 2 cups diced or shredded cooked turkey, you may substitute chicken 1 cup canned whole kernel corn, you may substitute frozen corn 1 cup chunky salsa 6 burrito-size (about 8-in.) flour tortillas No stick cooking spray Sliced pitted ripe olives sour cream, (optional) 1. In small saucepan prepare white sauce mix according to package directions; stir in cheese until melted and smooth; set aside. 2. In medium bowl combine turkey, corn and salsa. Stir in 1 cup cheese sauce. 3. Spoon about 1/2 cup turkey mixture down center of each tortilla; roll up and place seam-side down in 13 x 9-inch baking dish coated with cooking spray. Spread remaining cheese sauce over enchiladas, spreading almost to edge. Sprinkle with olives. 4. Bake in 375°F oven 20 to 25 minutes or until hot and bubbly. If desired, serve with additional salsa, shredded cheese or sour cream. Serves: 6
