8 lrg. baking potatoes 8 oz. sour cream 3 oz. cream cheese 1/4 cup butter,melted 1/4 cup milk 2 clv. garlic, minced 1/2 tsp. dried dill weed salt and pepper to taste 1/2 cup Parmesan cheese, grated
Boil potatoes unti tender. Beat potatoes along with sour cream, cream cheese,butter, milk, garlic,dill weed,and salt and pepper. Place in a casserole dish and sprinkle with Parmesan cheese. Bake at 350 degree for 30 minutes.

This was one I had a freind ask me for. I am not sure exactly where I found it, but about com comes to mind on this.I was told it is excellent for those holiday meals when everything can be so frantic.
Make Ahead Mashed Potato Casserole
1 8oz. pkg. cream cheese, softened 2 c. leftover or instant mashed potatoes 2 well beaten eggs 1 small finely chopped onion 1 tbsp. flour 1/4 tsp. salt 1/8 tsp. pepper 1/2 c. bread crumbs
Preheat oven to 350. Grease a 1 1/2 quart baking dish. Combine cream cheese, potatoes, eggs, onion, flour, salt and pepper together and whisk together for 3 - 5 minutes. Pour into the baking dish and sprinkle with bread crumbs. This is where you can cover and freeze for later use or you can bake it now, for 25 to 30 minutes. Makes 4 servings.
