1 large head fresh broccoli 1/2 jar Cheeze-whiz 1 cup milk 2 eggs, slightly beaten 1 sleeve Ritz crackers, crushed to fine crumbs 1 T margarine melted
Chop the broccoli into small pieces and cook broccoli in salted water until fork tender. Drain and cool slightly.
In a medium bowl, mix Cheeze Whiz with milk and microwave for 2 minutes or until cheese is melted and able to be incorporated with milk. Add beaten eggs to milk mixture.
In a small bowl, add melted margarine to cracker crumbs and place half of this mixture in a 1.5-quart buttered casserole dish.
Add half of the broccoli, then half of milk/cheese/egg mixture. Add remaining broccoli and top with the rest of the milk/cheese/egg mixture. Top with remaining cracker crumbs and bake at 350 degrees for 30-45 minutes or until knife inserted comes out clean.
