Butch’s Sausage Casserole
1 can cream of chicken soup 1 1/3 c. water ¾ c. long grain white rice – dry ½ tsp. onion powder – or to taste 2 c. mixed fresh or frozen vegetables, cut in bite size pieces sliced link sausage, browned, about 1 lb. (like kielbasa)* ½ to ¾ c. shredded cheddar cheese
Mix well all ingredients. Place in an 8 x 12” baking dish and cover. Bake @ 375ºF for 45 minutes. Uncover and top with cheese. Put back in oven till cheese melts. *You can use 4 skinless, boneless chicken breast halves instead.

I made this for dinner tonight, however I had to modify the baking time somewhat. After you take the lid off and put the cheese on top, you will need to bake it at 450º F for 15 to 20 minutes to let it thicken. It was very good!!!!!! I will make it with chicken breast tenders next time. You could even use browned ground beef (about 1 lb.)!!!!
