BLUEBERRY EGGNOG PIE ½ cup sugar, divided
1 tablespoon unflavored gelatin Dash salt
3 eggs, separated
1½ cups milk
1 teaspoon vanilla
½ cup heavy cream, whipped
1 9-inch baked pastry shell
1/8 teaspoon ground nutmeg
1 to 2 cups blueberries, washed and drained
¼ cup sugar
Combine 1/4 cup sugar, gelatin, and salt in top of double boiler; add beaten egg yolks and milk. Cook, stirring over low heat until mixture thickens slightly; remove from heat. Add vanilla. Chill, stirring occasionally, until mixture mounds when dropped from spoon. In a large bowl, beat egg whites until soft peaks form. Gradually add remaining ¼ cup sugar; beat until stiff peaks form. Beat gelatin mixture until smooth; fold in egg whites and whipped cream. Pour into pie shell; sprinkle with nutmeg. Chill until firm. Ten minutes before serving, combine blueberries and ¼ cup sugar. Top each piece of pie with spoonful of berries
