SWEET POTATO PIE 3 cups cooked sweet potatoes
1 cup packed light brown sugar
½ teaspoon ground cinnamon
¼ teaspoon ground allspice
¼ teaspoon ground nutmeg
¼ teaspoon salt
3 eggs, beaten slightly
1 cup half-and-half
4 tablespoons melted butter
1 unbaked 9-inch pastry shell
Preheat oven to 4500R Blend the sweet potatoes in a blender or food processor until pureed. In a large mixing bowl, combine potato puree, brown sugar, cinnamon, allspice, nutmeg, and salt. Mix well. Add eggs, half-and-half, and butter. Mix until thoroughly blended. Pour into pastry shell. Bake 10 minutes at 4500F, then reduce heat to 2500F and continue baking 20 minutes, or until a knife inserted in the center comes out clean. Cool on wire rack. Serve with whipped cream or vanilla ice cream. Makes one 9-inch pie.
