Ingredients: 6 ripe bananas 3 eggs seperated 2 c. whole milk 2.5 c. sugar 1 t. vanilla flavoring 1.5 tbsp flour 1 bag/box vanilla waffers 1 tsp cream of tarter
2qt pot, on med-low heat, combine: wisk egg yellows, 1.5 c sugar, 2 c milk, vanilla. (cook until low boil and sugar is melted) wisk constantly. add flour gradually to thicken. remove from heat immediatly
In a glass casserole dish, layer bottom with vanilla wafers, then layer with cut bananas, pour on cooked custard. relayer with cookies, bananas, custard, repeat until near the top of casserole dish.
Use room temperature egg whites in a clean metal bowl, gradually add remaining sugar, and cream of tarter, beat on med-high until stiff peak.
Spread ontop of casserole, bake at 325 degree's until meringue is lightly golden brown. allow to cool 15-30 minutes, serve. DO NOT REFRIDGERATE left overs, as this discolors bananas.
