Fried Bread Pudding (Torrijas)
Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/8 pounds stale bread 2 1/8 cups milk 2 tablespoons sugar 1 tablespoon anise seed 1 teaspoon ground cinnamon 1/2 lemon -- grated rind of 4 eggs
Cut the bread (if necessary) into 1 cm. slices. Mix the rest of the ingredients (except the eggs) and dip the slices of bread in the mixture. Place them on a tray or board, leaving to soften for a few hours. Coat in the beaten eggs and fry on a low heat, ensure they do not burn. Remove when golden and place on tray, sprinkling with sugar.
