PEKING DUCK QUESADILLA
Confit duck legs 3 ea. Green onions, sliced 4 ea sliced Hoisin sauce 1 cups Cilantro, chopped 1/4 cup chopped Flour tortillas 12 Grated cheese 2 Cups ( Jack or Mozzarella) Shred the meat from the duck legs. Toss with remaining ingredients, sprinkle grated jack or mozzarella cheese on a flour tortilla, spread 3 heaping tablespoons of duck mixture on top add more cheese, top with another tortilla and press to seal. Pan fry until golden brown on both sides, cut like a pizza and garnish with Hoisin and sour cream. Can and should be scaled down for home preparation.
