1 1/2 c. flour, unsifted 1 c. sugar 1/4 c. cocoa 1 tsp. soda 1/2 tsp. salt 1 c. water 5 tbsp. salad oil 1 tbsp. cider vinegar 1 tsp. vanilla Chocolate chip filling (below) 1/3 c. finely chopped walnuts
Stir together dry ingredients. Beat together liquids and gradually stir into dry ingredients. Stir until well blended. Fill 18 cupcake cups 1/2 full of batter. Top each with 1 tablespoon chocolate chip filling and 1/2 teaspoon walnuts. Bake at 350 degrees for 25 minutes or until top springs back when lightly touched. Chocolate Chip Filling: Beat together 1 (8 ounce) package cream cheese, 1 egg and 1/3 cup sugar until smooth. Stir in 1 (6 ounce) package semi-sweet chocolate chips.
