This is my favorite chocolate cake recipe. It's our "official" birthday cake, in my family. I found out, a few years back, that this can be baked in two loaf pans, instead of regular cake pans, and makes a nice, easily sliced loaf.
If you're only looking to make one loaf, the recipe can be halved, but it freezes well, so you could make "one for the gang and one for the freezer".
I found out this cake also sends well, through the mail! (I found this out when a child, who firmly believes that her Aunt Jo can do ANYTHING, said "Aunt Jo, could you send me a birthday cake?" Sure, why not! *LOL*) I just bake the cake in a loaf pan, wrap it well in aluminum foil and stick it in a box with a tub of store bought frosting! The person getting the cake, can either frost the entire loaf, or spread the frosting on the slices like butter! It's also good WITHOUT the frosting! And this recipe is SUPER easy!
CHOCOLATE WONDER CAKE 3 cups flour 2 cups sugar 6 Tablespoons unsweetened cocoa 2 teaspoons baking soda 1 teaspoon salt 3/4 cup cooking oil 2 teaspoons vanilla 2 Tablespoons vinegar 2 cups VERY COLD water
Combine dry ingredients and mix together well. Make a well in the middle and pour in all the liquid ingredients. Mix well. Pour into greased and floured loaf pans and bake until cake tests done. *I usually start checking at about 35 minutes to see if it's done.
**variation: for a chocolate mint loaves. Replace the vanilla with peppermint extract.
