Apple Cheddar Crumble
Serves 6 400*F oven
2 lb tart green apples, peeled and sliced (5-5 ½ cups) 1/2 cup golden raisins 1 cup brown sugar 2 tsp cinnamon 1 tsp nutmeg ½ tsp ground cardamon 2/3 cup flour 1 ¼ cup finely shredded sharp cheddar cheese, room temp. 4 TBS cold butter ½ cup fine chopped pecans
Combine apples, raisins, 2/3 cup brown sugar and spices. Put in shallow 3 QT baking dish. Combine remaining sugar with flour and 3/4 cup cheese. Cut in butter til crumbly. Stir in remaining cheese and pecans. Sprinkle over apples. Bake 35 - 40 minutes. Let sit 5 minutes before serving. Do not use pre-shredded cheese.
