Luby's Cafeterial Macaroni and Cheese
8 ounces (2 cups) dry elbow macaroni 2 tablespoons nonfat dry milk 2 tablespoons all-purpose flour 1 tablespoon butter or margarine, melted 1 1/4 cups boiling water 3 cups (12 ounces) shredded American cheese 1/4 teaspoon salt
Cook macaroni according to package directions. Preheat oven to 350 degrees. In a large bowl, mix dry milk, flour and butter. Gradually add boiling water, beating constantly and add 1 1/2 cups of the cheese and continue beating until smooth and creamy. Stir in macaroni. 1 cup of the remaining cheese and salt. Transfer to a lightly greased 2-quart baking dish. Cover with foil. Bake 25 minutes at 350 degrees.

Luby's Jalapeno Cornbread
1/2 C. whole milk 1/2 C. buttermilk 1 extra large egg 2 Tbsp. oil 1 Tbsp. Sugar 1/2 tsp. baking powder 1 C. white or yellow cornmeal 1/3 C. all purpose flour 1 1/2 Tbsp. diced red bell pepper 1 1/2 Tbsp. drained stemmed and chopped jalapenos 1 1/2 Tbsp. whole kernel corn
Preparation: Preheat oven to 425 degrees. In a large mixing bowl ,whisk together milk, buttermilk ,egg, oil ,sugar ,salt , and baking powder, add cornmeal and flour; mix well. Blend in red pepper Jalapenos , and corn. Place In greased pan or cast iron skillet and bake at 375 for 20 to 25 minutes. Houston Chronicle

Does anyone have a recipe for Luby's carrot raisen salad? I used to have a recipe that I got from Minute Maid Raisen Company years ago but I lost it. It had raisens and pineapple chunks in it. Thanks

Does anyone have a recipe for Luby's carrot raisen salad? I used to have a recipe that I got from Minute Maid Raisen Company years ago but I lost it. It had raisens and pineapple chunks in it. Thanks 2 lb carrots peeled and trimmed 1 cup raisins 1 cup canned crushed pinapple, drained 1 cup mayo 1/2 cup powered sugar Shread carrots using large hole of grater. In large bowl, combine carrots, raisens and pinapple In small bowl mix mayo and powered sugar until well blended. Pour over carrot mixture and toss lightly to coat evenly. Cover and refigerate at least 2 hours

How about Lubys Fried Fish ?? 2 cups water 1/4 fresh lemon juice 2 tsp Worchester 2 cups all purpose flour 1/4 c paprika 2 tb seasoned salt 6 7-8 oz catfish fillets 2 tb vegetable oil Lemon slides or wedges and fresh parsley In shallow bowl, mix water, lemon juice and worchester. In separate shallow bowl mix flour paprika and salt. Dip fish into water mixture, then in flour mixture , coating evenly and shaking off excess Heat oil in large skillet over medium heat. Add fish and cook 6-7 minutes depending on thickness. Turn and continue cooking about 6 minutes or until fish flakes when tested with fork. Garnish with lemon and parsley.

does anyone have the lubys cornbread dressing recipe? =) 4 cups corn bread crumbled 2 1/2 torn dry white bread (1 inch pieces) 2 1/2 cups chicken broth 1 1/4 chopped celery 3/4 cup chopped onion 1/2 stick butter melted 3 tb vegetable oil 2 tsp rubbed sage 3/4 tsp seasoned salt 3/4 tsp pepper 3 extra large eggs In large bowl combine breads and broth. Mix well and let stand 15 minutes. Heat oven to 375. Add celery, onion, butter, oil, sage, salt and pepper to bread mixture. Toss lightly In small bowl beat eggs until foamy fold into bread mixture. Transfer to greased 2 qt baking pan or dish. Bake 50 to 65 minutes or until top is golden brown. Fantome's recipes fantome.tripod.com/recipes.html
