This is a good recipe (I think). I often add more hot sauce (Frank's is a good brand and is used in the original Buffalo wings):
24 (about 4 pounds) chicken wings Salt and pepper, to taste 4 cups peanut, vegetable or corn oil 1/4 cup butter 2 to 3 tablespoons hot pepper sauce 2 to 3 teaspoons white vinegar Blue cheese dressing (recipe follows) Celery sticks
Recipe Cut off and discard small tip of each chicken wing.
Cut at joint, dividing wing into 2 pieces. Season with salt and pepper.
Heat oil in deep fryer or deep heavy skillet to 375 degrees. Add half the wings and fry about 10 minutes, until golden brown and crisp. Remove wings and drain well. Repeat frying with remaining wings.
Melt butter in a saucepan. Add hot sauce (more may be added; let your taste buds decide) and vinegar.
Place wings on a warm platter and pour butter mixture over them.
Serve with blue cheese dressing and celery sticks.
Makes 4 to 6 servings.
Blue cheese dressing
1 cup mayonnaise 2 tablespoons finely chopped onion 1 teaspoon minced garlic 1/2 cup sour cream 2 tablespoon chopped parsley 2 to 3 teaspoons lemon juice 2 to 3 teaspoons white vinegar 1/4 cup crumbled blue cheese Salt (optional) Freshly ground black pepper Cayenne pepper Combine mayonnaise, onion, garlic, sour cream, parsley, lemon juice, vinegar and blue cheese in a mixing bowl.
Season to taste with salt, pepper and cayenne.
Mix and chill 1 hour or longer before serving.
Makes about 1 1/2 cups.
