1 cup sugar plus 2 Tbl 3 Tbl cornstarch 1 cup boiling water 4 Tbl lemon juice 2 Tbl butter 4 egg yolks Pinch of salt Grated rind of 1 lemon
Combine cornstarch and sugar. Add water slowly, stirring constantly until thick and smooth. Add slightly beaten egg yolks, butter, lemon rind, juice and salt. Cook 2 to 3 minutes. Pour into baked pie shell. Cover with meringue made from 3 egg whites beaten stiff and 2 Tbl sugar. Bake in slow oven for 15 minutes or until light brown. Cool to room temperature before refrigeration to keep from "weeping" meringue.
