Damons Grill Harvest Chicken and Caramelized Onions and Cranberry Compote 6oz. Rice
Lean 2-Chicken Breasts
4oz. Caramelized Onion Cranberry Compote
-2lbs. Colossal Onions
-2-8oz portions of Apple Butter
-8oz. Raisins
-16oz. Cranberries
6oz. Vegetables
1/2tsp. Chopped Parsley
Makes enough for 14 guest. Use half of the ingredients and it makes 5-6 dinners.
Full Round
6oz. Rice
Lean 2-Chicken Breasts (Inverted V tip side up. Brush chicken breast with apple butter right before removing from the grill) on rice.
Top with
4oz. Caramelized Onion Cranbeeey Compote (Microwave 4oz. portion for appox. 45 sections. Place on top of Chicken.)
6oz. Vegetables
1/2tsp. Chopped Parsley
Caramelized Onions anbd Cranberry Compote
Prep...
1. Cut the onion into half after peeling. Then set the cut side down on to the cutting board. Next slice the onion into half inch sliced-across the onion from root end to top.
2. Add 8 oz. of baked Apple Buttern to a saute pan and melt. Mix in the onions and cook until soft and tender. Stir often so not to burn the onions.
3. Stir in the raisins and the dreid cranberries. Cokk for approximately 2 minutes. Add the remaining 8oz. of baked Apple Butter in well, and melt.
Cool...
4. Place the contents in a 2-inch hotel pan and set in a cooler and cool in 4 hours.
5. Portion the mixture into 8oz. portion containers. Each portion equals 4oz.
Hold...
6. Hold under refrigeration.
Reheat...
7. Uncover and warm in the microwave for 45 seconds
