Salmon with Blue Cheese
1 tablespoon Worcestershire for chicken 1/4 cup nonfat half + half 1/2 cup crumbled blue cheese, plus extra crumble blue cheese 1 tablespoon flour Olive oil 1 teaspoon freshly ground black pepper 4 salmon fillets, 1/2 - 1 inch thick 1/4 cup chives, snipped into 1/4 inch pieces
Mix the Worcestershire sauce, half + half, the 1/2 cup blue cheese, and flour in a saucepan over a medium/low heat. Stir until the cheese melts and begins to boil. Remove and keep warm. Coat grill with cooking spray. Preheat for 5 minutes. Brush fillets with oil and sprinkle with pepper. Grill 4 - 5 minutes, until flakes easily. Serve topped with cheese sauce, chive and a little extra of the crumbled blue cheese. Makes 4 servings.
