This is a recipe I've had for years. Lor Eagle Brand Fruitcake 2 1/2 cups sifted pastry flour 1/2 tsp. salt 1 tsp baking soda 2 eggs 3 cups mince meat 1 1/2 cups(1 can) Eagle Brand Sweetened Condensed Milk 2 tbsp. sherry(optional) 1 cup walnuts, coarsely chopped 2 cups mixed candied fruit Preheat oven to 300F. Grease 9-inch tube pan. Line with brown paper; grease again. Sift flour, salt and baking soda. Set aside. In large-size bowl slightly beat eggs, add mince meat, sweetened condensed milk, sherry, nuts and fruit; mix well. Stir in sifted dry ingredients. Turn into prepared pan. Bake in slow 300F oven for 2 hours. Cool in pan for 5 minutes. Turn out of pan; remove paper. Cool. Decorate. Wrap in foil and store in refrigerator.
